Gumbo is a real creole dish, Its served in a soup bowl with boiled rice You can use any of the following to make a good gumbo. Chicken, duck, goose, wild duck, quail, quinea fowl, rabbit or squirrel, you can add sausage, andouille sausage, smoked sausage
List of Ingredients
Roux
1 cup oil
1 cup flour
2 lbs of fresh shrimp peeled
4 tablespoons oil
1 chicken cut up.
creole seasoning to taste
1 Bell Pepper chopped
2 sticks of celery chopped
2 cloves garlic minced
1 tablespoon Worcestershire sauce
1 tablespoon chopped green onions
1 Onion chopped
2 quarts of water
Recipe
Make roux. add 1 cup oil and 1 cup flour brown slowly until about the color of milk chocolate.
in another pan
Brown chicken in 4 tablespoons oil in a large aluminum dutch oven (Do not use a black Iron Pot)
Remove and set aside.
add celery, bell pepper, garlic, saute until onion is clear.
add to roux
stir to mix
add water, and chicken, worchestershire sauce.
15 mins before done add peeled shrimp..
cook for 30 minutes
Serve with boiled rice, garnish with chopped green onions and a sprinkle of File'
