    Okra is an African vegetable (Kumba) that found its way to America in the early 1600s. If you can find baby okra, fry the whole pod. You will never seem to have enough fried okra. I can eat fried okra like a big bowl of popcorn.

    List of Ingredients




    1 pound fresh young okra
    1 cup plain corn meal
    4 cups plain flour
    3 cups buttermilk
    3 teaspoons salt
    2 eggs
    2 teaspoons black pepper
    4 cups vegetable oil
    (peanut oil preferred)

    Recipe



    Heat oil to 345 degrees in a deep, heavybottomed pot. In a medium mixing bowl, mix salt, pepper and flour. Divide flour mixture into 2 mixing bowls. Add the corn meal to the second bowl of flour. In yet another medium mixing bowl, whisk eggs and buttermilk. Wash okra and then slice in 1/2-inch slices. Toss 1/3 of the sliced okra in the flour, then in the egg mixture, then in the second flour mixture, coating well. Fry until golden brown. Remove with a slotted spoon from fryer and drain on paper towels or paper sacks. Sprinkle with salt if needed. Repeat until all okra is used.
