    Orange Marmalade Cream Cheese Bars

    List of Ingredients




    3/4 cup softened butter
    3/4 cup sugar
    1/4 tsp. salt
    2 cups flour
    1-1/3 cups toasted chopped pecans
    12 oz. cream cheese, softened
    2 eggs
    1 tsp. vanilla
    1-1/2 cups good quality orange marmalade

    Preheat oven to 350° F. Grease 9 x 13 inch pan. Beat the butter, sugar and salt until light and fluffy. Stir in the flour one half cup at a time. Stir in one cup of the nuts to the flour mixture. Transfer one cup to a small bowl, add remaining 1/3 cup nuts, set aside. Press the remaining mixture over the bottom of the prepared pan. Bake 15 minutes. Let cool.

    Beat the cream cheese in a large bowl until smooth. Add the eggs one at a time. Stir in the vanilla and 3/4 cup marmalade. Spread the remaining 3/4 cup marmalade over the cooled cookie base. Pour the cream cheese mixture over the top, and smooth the surface. Sprinkle with the reserved nut mixture.

    Bake 20-25 minutes or until the center looks set. Cool at room temperature on a rack. Cover, put in fridge for at least three hours. Makes 24 squares.
