    Bourbon-Marinated Chuck Roast

    1 (3-4 lb.) boneless chuck roast
    Meat tenderizer
    1 (5 oz.) bottle soy sauce
    1-1/2 cups water
    1 Tblsp. lemon juice
    1/2 cup firmly packed brown sugar
    1/2 cup bourbon

    Recipe



    Sprinkle roast with tenderizer, and prick with fork; place roast in a shallow pan. Combine remaining ingredients, stirring well. Pour marinade over roast. Cover and place in refrigerator at least 12 hours or overnight, turning at least once. Remove roast from marinade, and place on grill; cook over hot coals 30 to 45 minutes, basting often with marinade. Yield: 8 servings.
