    Cranberry Orange Nut Bread

    List of Ingredients

    1 cup fresh or frozen cranberries, chopped coarsely
    1/2 cup chopped nuts
    1 Tblsp. orange zest
    2 cups flour
    1 cup sugar
    1-1/2 tsp. baking powder
    1 tsp. salt
    1/2 tsp. baking soda
    2 Tblsp. shortening
    3/4 cup orange juice
    1 egg, well beaten


    Recipe

    In bowl mix flour, sugar, baking powder, soda and salt and cut in shortening. Stir in juice, egg, and zest, mix just until moistened. Fold in cranberries and nuts. Pour into greased and floured 9- x 5- x 3-inch loaf pan and bake at 350° F. for about 60 minutes or until the toothpick test works. Cool in pan for 15 minutes before turning on it's side on a rack to cool completely. Wrap in plastic and allow to sit overnight.
