    List of Ingredients




    2 pkg. active dry yeast
    1-1/2 cups warm water
    1 Tblsp. plus 1 tsp. instant coffee granules
    1 Tblsp. honey
    1 Tblsp. butter or margarine
    2-1/2 cups plus 2 Tblsp. bread flour
    2-1/2 Tblsp. unsweetened cocoa
    1 Tblsp. anise seeds
    1-1/2 tsp. caraway seeds
    3/4 tsp. salt
    1 cup plus 1 Tblsp. rye flour
    Vegetable cooking spray
    2 tsp. cornmeal
    1 egg white
    1 Tblsp. water

    Recipe



    Place first 11 ingredients in bread machine according to manufacturer’s instructions. Use dough cycle. After cycle has ended, remove dough from machine. Sprinkle cornmeal over baking sheet; set aside. Shape dough into 6-inch round loaf. Place loaf on prepared baking sheet. Cover and let rise until doubled in bulk. Cut a 1/2-inch deep X in top of dough. Combine egg white and 1 Tblsp. water; brush over loaf. Bake at 375° F. for 25 minutes or until loaf sounds hollow when tapped. Remove from baking sheet; cool on wire rack. Cut into wedges. Yield: 18 wedges.
