    1 cup water (90° 100°)
    3 cups bread flour
    1 Tbsp dry milk
    2 Tbsp sugar
    3/4 tsp salt
    1 Tbsp vegetable shortening
    1-1/2 tsp active dry yeast
    Coarse salt
    1 egg white, slightly beaten

    Setting to use: Dough
    Add lukewarm water to pan. Add bread flour, dry milk, sugar and salt to pan. Tap pan to settle dry ingredients, then level ingredients, pushing some of the mixture into corners. Place shortening into corners of pan. Make a well in center of dry ingredients; add yeast. Lock pan into bread maker.

    Program for DOUGH. Start bread maker. When done, remove pan from bread maker. Place dough onto floured surface.

    Knead dough about 1 minute. Roll out into a rectangle, about 2" thick. Divide dough into 16 equal pieces. Shape each piece into a ball, place on a greased baking sheet, cover and rise in warm, draft free place for 30 50 minutes until slightly risen.

    For BREAD-LIKE pretzels, brush with egg white, then sprinkle with coarse salt. Bake in preheated 375° for 20 25 minutes or until golden brown. Place on rack to cool.

    For CHEWY pretzels, bring 2 quarts water to a boil in 5 quart dutch oven. Add 1 tbsp salt and stir to dissolve. Reduce heat to simmer and place 2 to 3 pretzels into hot water. Simmer 1 minute on each side. Remove with slotted spoon, drain, then place on greased baking sheet. Brush with egg white, then sprinkle with coarse salt. Bake in preheated 375° oven for 20 25
    minutes or until golden brown. Place on rack to cool.
