Jeweled Pepper Chutney

List of Ingredients
8 large red bell peppers, cut into 1/4-inch cubes
4 jalapeño peppers, finely chopped
8 cloves garlic, minced
2-1/2 cups cider vinegar (5% acidity)
2 cups firmly packed brown sugar
2 cups sugar
2 cups golden raisins
1/3 cup finely chopped crystallized ginger (2 oz.)
Recipe
Combine all ingredients in a large Dutch oven, and bring to a boil. Reduce heat, and simmer, uncovered, 1 hour and 45 minutes, stirring occasionally.
Spoon into hot, sterilized jars, filling to 1/2-inch from top. Remove air bubbles, and wipe jar rims. Cover at once with metal lids, and screw on bands. Process in boiling water bath 10 minutes. Yield: 6 half-pints.
