    Almond Brickle Sugar Cookies

    List of Ingredients

    2-1/4 cups all-purpose flour
    1 cup sugar
    1 cup butter, softened (no substitutes)
    1 egg
    1 tsp. baking soda
    1 tsp. vanilla extract
    1 (6 oz.) pkg. almond brickle chips (toffee chips)


    Recipe

    Heat oven to 350° F. In large mixer bowl combine all ingredients except brickle bits. Beat at medium speed, scraping bowl often, until well mixed (2 to 3 minutes). By hand, stir in brickle bits. Shape rounded teaspoonfuls of dough into 1-inch balls. Place 2 inches apart on ungreased cookie sheets. Bake for 8 to 11 minutes or until edges are very lightly browned.

    VARIATION:

    Chocolate Chip Sugar Cookies: 1 cup mini semi-sweet chocolate chips can be substituted for 1 (6 oz.) package brickle bits.
