1/2 lb. each ground beef & ground veal
1 Egg, slightly beaten
1/4 cup Breadcrumbs
Herbs to taste (oregano, parsley, basil, garlic powder)
Salt & Pepper
Parmesan Cheese, to taste
4-6 cups Chicken Broth
1/2 cup Chopped Cooked Chicken
1/4 cup Chopped Celery
1/4 cup Chopped Carrots
1/4 cup Escarole, chopped
2 Bay Leaves
Garlic Powder
Mrs. Dash Original Blend Seasoning
1/4 cup Pastina di Pepe
1/4 cup Grated Romano Cheese
Recipe
Combine beef and veal, egg, breadcrumbs, herbs, salt & pepper, and Parmesan cheese. Form tiny meatballs. Brown in 350º F. oven for 1/2 hour. Mix together chicken broth, chicken, celery, carrots, escarole, bay leaves, garlic powder, Mrs. Dash, and pastina. Cook on low 8 hours. Sprinkle with Romano cheese.
