Beef Enchiladas

List of Ingredients
1 lb. ground beef
1 cup cottage cheese
2 Tblsp. minced fresh parsley
1/2 tsp. garlic powder
1/2 tsp. salt
1/4 tsp. pepper
8 flour tortillas (7-inch)
SAUCE:
1 medium onion, chopped
1/2 medium green pepper, chopped
1 Tblsp. cooking oil
1 (15 oz.) can tomato sauce
1 (4 oz.) can chopped green chilies
2 tsp. chili powder
1 tsp. sugar
1/2 tsp. garlic powder
1 cup (4 oz.) shredded cheddar cheese
Recipe
In a skillet brown the ground beef; drain. Combine with cottage cheese, parsley, garlic powder, salt and pepper. Place about 1/3 cup filling on each tortilla, roll up. Place tortillas, seam side down, in an ungreased 13- x 9- x 2-inch baking dish.
For sauce, saut� the onion and green pepper in oil until tender. Add tomato sauce, green chilies, chili powder, sugar, and garlic powder. Pour over tortillas. Cover and bake at 350� F. for 30 minutes. Sprinkle with cheese and return to the oven for 5 minutes or until cheese melts. Yield: 4 servings.
