    List of Ingredients




    4 skinless, boneless chicken breasts halves
    3/4 cup milk
    3 canned chipotle chilis
    6 cloves garlic, minced
    1/2 tsp. ground cumin
    1/2 tsp. onion powder
    1/2 tsp. salt
    2 Tblsp. butter
    1-1/2 Tblsp. flour
    1/2 cup half and half
    1/4 cup sour cream
    8 oz. Queso or Monterey Jack cheese, grated
    Minced chipotle chilis for garnish

    Preheat oven to 350 degrees F. Place chicken in an ovenproof baking dish and place in preheated oven and bake for 20 minutes.

    Meanwhile, combine milk, chipotles, garlic, cumin, onion powder, and salt in a blender and puree until smooth.

    Heat butter and flour in a large skillet and blend until smooth; add half and half and sour cream, whisking until smooth. Stir in chipotle puree, and stir constantly until mixture comes to a boil and thickens; remove from heat.

    After chicken has baked 20 minutes, remove from oven and pour chipotle cream over chicken. Top with grated cheese.

    Replace chicken in oven and bake for about 20 minutes more, or until cheese just starts to brown.

    Remove from oven and serve over rice. Garnish with the minced chipotle chilis. Makes 4 servings.
