Chicken in Mushroom Cream Sauce

2 Tblsp. vegetable oil
1/2 medium onion, cut in 1/2-inch dice
1 clove garlic, minced
1 boneless, skinless chicken breast, cut into 1/2-inch strips
2 (4 oz.) cans mushroom stems and pieces, undrained
1 Tblsp. cornstarch
1/2 cup heavy cream, half-and-half, or milk
Salt and pepper
Grated Parmesan cheese
Parsley, for garnish (optional)
Recipe
Heat oil in a medium to large sauté pan over medium-high heat. Sauté onion, garlic, and chicken strips until lightly browned (2 minutes).
Add mushrooms with liquid. Cook for 3 to 5 minutes, or until chicken is cooked through.
In a small bowl, add cornstarch to cream and stir until smooth. Stir into the chicken mixture. Bring to a boil and cook until the sauce thickens. Stir well, then lower heat and simmer for 2 minutes. Season to taste with salt and pepper. Serve over rice or noodles or pasta. Sprinkle with Parmesan cheese and garnish with parsley. Makes 2 servings.
