Creamy Chicken & Spinach Enchiladas

1 lb. uncooked chicken breast strips
1 pkg. (8 oz) cream cheese, cut into cubes
1 pkg. frozen chopped spinach
1 pkg. flour tortillas
2 cans Old El Paso green chili enchilada sauce
2 cups Monterey Jack (or Cheddar Jack) cheese, shredded
Recipe
Preheat oven to 400 degrees. Lightly grease a 13x9x2-inch baking dish. Cook spinach in microwave until done (about 4 minutes). Cook chicken in skillet until done (no longer pink in center). Add cream cheese, spinach, and 1/4 can enchilada sauce to chicken. Cook until blended and cream cheese is melted.
Spoon mixture onto tortillas; roll up and place seam side down in dish. Pour rest of enchilada sauce on top and sprinkle with cheese. Bake 15 to 20 minutes or until hot and cheese is melted.
