1/4 cup all-purpose flour
1/4 tsp. salt
Dash of black pepper
1 whole chicken, cut up
Oil
1 (10 oz.) jar peach preserves
1/2 cup barbecue sauce
1/2 cup chopped onion
2 Tblsp. soy sauce
1 large can water chestnuts, drained and sliced
1 green bell pepper, cut into strips
Hot cooked rice
Recipe
In a large bowl, combine the flour, salt, and pepper. Coat the chicken with the seasoned flour. In a large skillet, brown the chicken in a small amount of oil; drain. In a separate bowl, combine the preserves, barbecue sauce, onion, and soy sauce and pour the mixture over the chicken. Cover and simmer for 40 minutes, or until the chicken is tender. Add the water chestnuts and green pepper slices during the last 10 minutes of cooking. Serve over hot cooked rice.
