    Pressure Cooker Rice Pilaf w/Veggies

    List of Ingredients

    3 cups long-grain white rice
    1/2 tsp. salt
    3 cups chicken broth or water
    1 cup frozen, chopped vegetables
    1 onion, chopped
    1 tsp. cumin
    1/2 green bell pepper, diced
    1 Tblsp. vegetable oil
    1/2 cup mushrooms, sliced

    Recipe

    Heat oil and sauté onion and mushrooms for 1 minute. Add rice, green pepper, cumin, salt and sauté for 2 to 3 minutes, stirring constantly, until rice brown. Add chicken broth and stir. Add frozen vegetables.

    Cover the pressure cooker and bring up to full pressure. Reduce heat and cook for 3 minutes. Cool naturally for 5 minutes. Open. Let stand 5 minutes without the cover. Stir gently.
