    3 large onions, chopped in large pieces
    6 to 8 stems celery, chopped in large pieces
    1 medium bell pepper, chopped in large pieces
    3 cans Chinese vegetables, drained
    2 cans Chinese beans sprouts, drained
    1 large can chop suey noodles
    1 can bamboo shoots, drained
    1 can water chestnuts, drained and sliced
    1 (4 oz.) can mushroom slices
    2 lb. boneless stew meat
    salt and pepper to taste
    1 to 1-1/2 cups soy sauce, to taste

    Use 1 tablespoon cooking oil in a 6-quart pressure cooker and sear the meat, stirring constantly. Add 3 or 4 tablespoons soy sauce and a little water; cook meat under pressure until tender. Add onions, celery and bell pepper. Cook until they start turning clear. Add chop suey vegetables, bean sprouts, bamboo shoots, water chestnuts and mushrooms. Add water to cover and then add remainder of soy sauce (cook just long enough so that celery and onions are done). Taste and add soy sauce, salt and pepper as needed. Thicken with cornstarch to consistency of medium thick gravy. Serve over rice and chop suey noodles or one or the other.
