    4 slices bacon
    1 medium onion, chopped
    2 ribs celery, chopped
    1 small green pepper, chopped
    2 cups raw rice, rinsed well
    1 (8 oz.) can tomato sauce
    1 tsp. sugar
    1 (1 lb.) can tomatoes, drained and chopped (reserve juice)
    1 tsp. salt
    Black pepper to taste
    Tabasco to taste

    Fry bacon in heavy pot until crisp; remove. Sauté onions, celery and bell pepper in bacon grease until onions are translucent. Crumble bacon; return to pot. Add rice. Stir to coat with grease; add tomatoes. Add water to tomato juice and tomato sauce to make 2-1/2 cups total liquid. Pour over rice and bring to boil, stirring occasionally. Lower heat until barely simmering, cover pot and cook for 20 minutes. Remove from heat and let set at least 20 minutes. Do not peek. Fluff with fork and serve.
