    Circus Peanut Jell-o Salad

    List of Ingredients

    7-1/2 oz. orange circus peanuts (about 30 pieces)
    2 cups boiling water
    1 large package orange jell-o (6-serving size)
    juice from oranges & cold water to equal 1-3/4 cups
    1 can mandarin oranges (16 oz.)
    2 cups Cool Whip

    Recipe

    Cut circus peanuts into small pieces. Dissolve jell-o in the boiling water. Add circus peanut pieces, stirring until dissolved. Drain and reserve the syrup from the mandarin oranges, adding enough cold water to equal 1-3/4 cups liquid. Add to jell-o mixture; chill until partially set. Stir together the oranges and whipped topping; fold into the jell-o mixture. Pour into a 13x9-inch casserole. Chill until firm. (*A 16-oz. can of crushed pineapple may be substituted for the oranges.)
