    ZESTY BLUE CHEESE SALAD DRESSING

    ZESTY BLUE CHEESE DRESSING

    2 oz. blue cheese, crumbled (2/3 cup)
    1/4 cup mild vegetable oil, such as canola or safflower
    1 tsp. grated lemon zest
    1 Tblsp. freshly squeezed lemon juice
    1 cup sour cream
    1/2 tsp. salt
    1 to 2 cloves garlic, peeled and minced

    DIRECTIONS:

    Place all ingredients in a food processor. Process, using short pulses, until the ingredients are thoroughly mixed but there are still some lumps of blue cheese. Refrigerate for at least 1 hour to mellow the flavors before serving. Remove the dressing from the refrigerator 30 minutes before you plan to serve the salad.
