    Italian Sausage Tortellini Soup

    List of Ingredients




    1 lb. sweet Italian sausage, crumbled
    1 cup chopped onion
    3 cloves garlic, minced
    5 cups beef broth
    1/2 cup water
    1/2 cup red wine
    1 (28 oz.) can concentrated crushed tomatoes
    1 cup sliced carrots
    1/4 cup fresh basil leaves, chopped
    1 tsp. dried oregano
    Swiss chard (or kale, or spinach)
    8 oz. tortellini pasta

    Recipe



    Brown sausage in 5 quart soup pot. Remove sausage and drain, reserving 1 Tblsp. drippings. Sauté onion and garlic in drippings. Stir in beef broth, water, wine, tomatoes, basil, oregano, tomato sauce, carrots, and sausage. Bring to a boil. Reduce heat. Simmer, uncovered, for 40 minutes. Stir in Swiss chard. Simmer, covered, for 15 minutes. Add tortellini and simmer an additional 10 minutes. Sprinkle with Parmesan cheese on top of each serving.
