CHEESE ASPARAGUS CASSEROLE
1 can (10.5 oz.) cut asparagus spears
1/4 cup chopped red bell pepper
1/3 cup mayonnaise
1/3 cup shredded mild Cheddar cheese
1/4 cup sliced green onions
1 egg white, beaten stiff
DIRECTIONS:
Drain asparagus reserving a few pieces for garnish, if desired, and place remaining asparagus in shallow 1-quart baking dish with red pepper. Combine mayonnaise with cheese and green onions. Fold in stiffly beaten egg white; spread mixture over asparagus. Bake at 350 degrees F. for 20 minutes or until heated through. Yield: 4 servings.
