    Classic Devil's Food Cake


    List of Ingredients


    • 2 cups sifted flour
    • 2 3/4 teaspoons baking powder
    • 1/4 teaspoon salt
    • 2/3 cup butter or vegetable shortening
    • 1 1/2 cups sugar
    • 3 eggs well beaten
    • 3 ounces unsweetened chocolate, melted
    • 3/4 cup milk
    • 1 1/2 teaspoons vanilla


    Instructions


    1. Preheat oven to 350F. coat two 9-inch cake pans with nonstick cooking spray and set aside.
    2. Sift flour, baking powder, and salt onto wax paper and set aside.
    3. Cream butter in large bowl until light, add sugar gradually, creaming all the while, then continue creaming until fluffy. Beat eggs in, then blend in melted chocolate.
    4. Add sifted dry ingredients to creamed mixture alternately with milk, beginning and ending with dry ingredients and beating after each addition only enough to combine. Stir in vanilla.
    5. Divide batter between pans, smoothing tops, and bake 30 to 35 minutes, until toothpick inserted in center of layer comes out clean and cake is springy to touch.
    6. Cool layers in pans on wire racks 10 minutes, then loosen and turn out on racks.
    7. Cool to room temperature, then fill and frost as desired.
