Classic Devil's Food Cake
List of Ingredients
- 2 cups sifted flour
- 2 3/4 teaspoons baking powder
- 1/4 teaspoon salt
- 2/3 cup butter or vegetable shortening
- 1 1/2 cups sugar
- 3 eggs well beaten
- 3 ounces unsweetened chocolate, melted
- 3/4 cup milk
- 1 1/2 teaspoons vanilla
Instructions
- Preheat oven to 350F. coat two 9-inch cake pans with nonstick cooking spray and set aside.
- Sift flour, baking powder, and salt onto wax paper and set aside.
- Cream butter in large bowl until light, add sugar gradually, creaming all the while, then continue creaming until fluffy. Beat eggs in, then blend in melted chocolate.
- Add sifted dry ingredients to creamed mixture alternately with milk, beginning and ending with dry ingredients and beating after each addition only enough to combine. Stir in vanilla.
- Divide batter between pans, smoothing tops, and bake 30 to 35 minutes, until toothpick inserted in center of layer comes out clean and cake is springy to touch.
- Cool layers in pans on wire racks 10 minutes, then loosen and turn out on racks.
- Cool to room temperature, then fill and frost as desired.
