    Hummingbird Cake

    This cake was first printed in Southeren living in Febuary 1978. It is one of my favorites!


    List of Ingredients


    • 3 cups flour
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • 2 cups sugar
    • 1 teaspoon cinnamon
    • 3 eggs well beaten
    • 3/4 cup vegetable oil
    • 1 1/2teaspoon vanilla
    • 1 (8-ounce) can crushed pineapple with liquid
    • 1 cup coarsely chopped pecans
    • 1 3/4 cups mashed bananas ( about 2 large)


    Instructions


    1. Preheat oven to 350. Grease and flour 3 9-inch round layer pans; set aside.
    2. Mix flour, soda, salt, sugar, and cinnamon in larte bowl; add eggs and oil and stir only enought to moisten dry ingredients---do not beat. Stir in vanilla, pineaple, pecans, and bananas.
    3. Divide batter amoung pans and bake 23 to 28 minutes, until a toothpick inserted in center comes out clean.
    4. Cool cakes in pans 10 minutes; loosen around edges and turn out on racks. cool completely before frosting.
