    Mayonnaise Cake

    This was once called Depression cake due to the fact it has no eggs, butter or milk.


    List of Ingredients


    • 2 cups self-rising flour
    • 1 cup granulated sugar
    • 1/2 cup unsweetened cocoa powder
    • 1 cup water
    • 1 cup mayonnaise
    • 2 teaspoons vanilla


    Instructions


    1. Preheat oven to 350F. Grease and flour 10-inch tube pan; set aside.
    2. Mix flour, granulated sugar and cocoa in medium bowl.
    3. Gradually wisk water into mayonnaise in small bowl and continue whisking until smooth. Stir in
      vanilla.
    4. Add mayonnaise mixture to flour mixture and stir until well blended.
    5. Spoon into pan, spreading to ede, and bake 45-50 minutes, until center springs back when lightly pressed.
    6. Cool cake in pan on wire rack 10 minutes. Loosen around edge and around central tube, invert on rack, and cool to room temperature.


    Final Comments


    If you don't have self-rising flour. For 1 cup self-rising flour = 1 cup flour -2 teaspoons,
    1 1/2 teaspoons baking powder, 1/2 teaspoon salt
