Texas Sheet Cake
List of Ingredients
- CAKE:
- 2 cups granulated sugar
- 2 cups sifted flour
- 1/2 cups (1 stick) butter or margarine
- 1/2 cup vegetable shortening
- 1/4 cup unsweetened cocoa powder
- 1 cup water
- 1/2 cup buttermilk
- 2 effs lightly beaten
- 1 teaspiin vanilla
- 1 teaspoon baking soda
- Icing
- 1/2 cup (1 stick) butter or margaring
- 1/4 cup unsweetened cocoa powder
- 1/3 cup milk
- 1 (1-pound) box confectioners sugar
- 1 teaspoon vanilla
- 1 cup chopped nuts
Instructions
- Cake:
Preheat oven to 400F coat 15 1/2 x 10 1/2 x 1 inch jelly-roll pan with nonstick cooking spray; set aside
- Sift granulated sugar and flour together into large mixing bowls; set aside
- Bring butter, shortening, cocoa, and water to rapid boil in medium saucepan, stirring occasionally. Pour over flour mixture and stir well to blend.
- Mix buttermilk, eggs, vanilla, and soda in large mesuring cup. Add to bowl and beat by hand until smooth.
- Pour into pan, smoothing to corners, and bake 20 minutes, until springy to touch and toothpick inserted in center of cake comes out clean.
- Icing:
Five minutes before cake is done, bring butter cocoa, adn milk to boil in medium sauce pan. Add confectioners' sugar and vanilla and beat with hand mixer at high speed until smooth. Stir in nuts.
- Ass soon as cake test done, set on wire rack and immediately spread frosting over top. Cool cake before cutting.
