Almond Bars
List of Ingredients
- Crust
- 1 large egg yolk
- 1 teaspoon vanilla
- 1 cup vegetable shortening
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 2 cups flour
- Topping
- 9 ounces milk chocolate
- 1/2 cup almonds chopped
Instructions
- Preheat oven to 350 degrees. Grease a 9-inch squar baking pan.
- To make crust, in a lmedium bowl, beat the egg yolk until thick and light-colored. Beat in the vanilla.
- In a loarge bowl, vream the vegetable shortening, granulated sugar, and brown sugar. Beat in the egg yolk. Gradually blend in the flour. The dough will be stiff.
- Press the dough evenly into the prepared pan. Bake for 18 to 20 minutes, or until the top is golden brown.
- Meanwhile, melt the chocolate in a double boiler over low heat, stirring until smooth. Remove from heat.
- Spread the melted chocolate over the top of the warm cookies.Sprinkle with the almonds. Cool in the pan on a rack before cutting into large or small bars.

Baking notes:
The chocolate can be baking chocolate, chocolate chips, or a candy bar. For variation, use white chocolate. For a stronger almond taste, use almond extract in place of the vanilla
