    Almond Bars


    List of Ingredients


    • Crust
    • 1 large egg yolk
    • 1 teaspoon vanilla
    • 1 cup vegetable shortening
    • 1/2 cup granulated sugar
    • 1/2 cup packed light brown sugar
    • 2 cups flour
    • Topping
    • 9 ounces milk chocolate
    • 1/2 cup almonds chopped


    Instructions


    1. Preheat oven to 350 degrees. Grease a 9-inch squar baking pan.

    2. To make crust, in a lmedium bowl, beat the egg yolk until thick and light-colored. Beat in the vanilla.
    3. In a loarge bowl, vream the vegetable shortening, granulated sugar, and brown sugar. Beat in the egg yolk. Gradually blend in the flour. The dough will be stiff.
    4. Press the dough evenly into the prepared pan. Bake for 18 to 20 minutes, or until the top is golden brown.
    5. Meanwhile, melt the chocolate in a double boiler over low heat, stirring until smooth. Remove from heat.
    6. Spread the melted chocolate over the top of the warm cookies.Sprinkle with the almonds. Cool in the pan on a rack before cutting into large or small bars.

    Baking notes:
    The chocolate can be baking chocolate, chocolate chips, or a candy bar. For variation, use white chocolate. For a stronger almond taste, use almond extract in place of the vanilla
