Almond Bits
Yield: 6 Dozen
List of Ingredients
- 2 Cups clout
- 1 Teaspoon baking powder
- 3/4 teaspoon cardamom
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup vegetable shortening
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 large egg
- 1 teaspoon almond extract
- 60 blanched almonds
Instructions
- Preheat oven to 350 degrees.
- Combine the flour, baking powder, spices, and salt.
- In a large boel, vream the vegetable shortening and both sugars. Beat in the egg and vanilla extract. Gradually blend in the dry ingredients.
- Divide the dough into 4 pieces. Roll each piece into a 15-inch-long rope. Cut each rope into 1 in long pieces.
- Press an almond into each cookie, adn place 1 inch apart on ungreased cookie sheet.
- Bake for 12 to 14 minutes, until the edges are golden brown. Transfer to wire racks to cool.
