Backpackers' Bars
List of Ingredients
- CRUST:
- 1/2 cup vegetable shortening
- 3/4 cup packed light brown sugar
- 3/4 cup flour
- 1/2 cup rolled oats
- 1/4 cup toasted wheat germ
- 1 toblespoon greated orange zest
- FILLING:
- 2 large eggs
- 1/4 cup acked light brown sugar
- 1/2 cup shredded coconut
- 2/3 cup slivered almonds
Instructions
- Preheat the oven to 350 degrees.
- To make the crust, cream the vegetable shortening and brown sugar in a large bowl. Blend in the flour, oats, wheat germ, and orange zest. The mixture will be dry.
- Press the crust mixture even'y over teh bottom of an ungreased 8-inch square baking pan.
- To make the filling, combine the eggs and browns sugar in a medum bowl and beat until well blended. Stir in the coconut.
- Spread teh filing over the crust. Sprinkle the almonds over the top
- Bake for 30 to 35 minutes, until frim to touch. Cool in the pan on a rack before cutting into bars
Final Comments
To enhance the flavor of these bars, add 1/4 teaspoon almond extract to the filling. Raisins may also be added if desired.
