    Caramel Cookies


    List of Ingredients


    • 3 Cups flour
    • 1 teaspoon cream of tartar
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon ground nutmeg
    • 1 cup canola oil
    • 2 cups packed light brwon sugar
    • 2 larg eggs
    • 1 teaspoon vanilla


    Instructions


    1. Combine the flour, cream of tartar, baking soda, and nutmeg.
    2. In a large bowl, beat the canola oil and brown sugar together. Beat in the eggs. Beat in the vanilla. Gradually blend in the dry ingredients.
    3. Form the dough into a log 1 1/2 inches in diameter. Wrap in waxed paper and chill for 4 hours.
    4. Preheat the oven to 375 degrees. Lightly grease 2 baking sheets.
    5. Slice the log into 1/4-inch thick slices and place 1 inch apart on the prepared baking sheets.
    6. Bake for 8 to 10 minutes, until lightly colored. Transfer to wire reacks to cool.
