Cheesecake Bars
List of Ingredients
- CRUST:
- 1 cup flour
- 1/3 cup packed light brown sugar
- 1/3 cup vegetable shortening
- FILLING:
- 2 large eggs
- 1 pound cream cheese --at room temperature
- 1/2 cup granulated sugar
- 2 tablespoons fresh lemon juice
- 1 teaspoon almond extract
Instructions
- Preheat the oven to 350 degrees.
- To make the crust, combine the flour and brown sugar in a bowl. Cut in the vegetable shortening until the mixture resembles couarse crumbs.
- Press the mixture evenly into thye bottom of a 9-inch square baking pan. Bake for 15 minutes.
- Meanwhile, making the filling: In a large bowl, beat the eggs until thick and light- colored. Beat in teh cream chease and sugar until smooth. Beat in the lemon juice and almond extract.
- Spread the filling evenly over the warm crust. Bake for 20 minutes longer, or until firm to the touch.
- Cool in the pan on a rack before cutting into bars.
