Candy Apple Salad

List of Ingredients
6 to 8 Granny Smith apples (with skins cut into bite size pieces)
1 1/2 cups dry roasted unsalted chopped peanuts.
16 ounces crushed pineapple, drained
8 ounces Cool Whip
1 cup sugar or For reduced sugar:
substitute 12 packets Sweet-n-low and 1 cup water for 1 cup sugar.
2 eggs
2 tablespoons apple cider vinegar (do not substitute)
2 tablespoons cornstarch
Recipe
6 to 8 Granny Smith apples (with skins cut into bite size pieces)

16 ounces crushed pineapple, drained
8 ounces Cool Whip
Combine above ingredients in large mixing bowl, set in refrigerator.
In medium saucepan combine;
1 cup sugar *
2 eggs
2 tablespoons apple cider vinegar (do not substitute)
2 tablespoons cornstarch
Mix together, and bring to a boil, stirring constantly until thickened to
pudding consistency (it will turn brown and appear to be burning, this is
normal)
Add mixture to apple mixture.
Refrigerate for 2 hours before serving
* For reduced sugar:
substitute 12 packets Sweet-n-low and 1 cup water for 1 cup sugar.
