    Peach Delight

    Sweet and peachy with a cake like topping.

    List of Ingredients

    Fresh peaches or 2 large cans peach slices(drained)

    1 1/4 cups sugar
    4 1/2 Tbs. margarine

    1 1/2 c. flour
    1 1/2 tsp. baking powder
    1/2 tsp.salt
    3/4 to 1 cup milk

    1 1/4 cups sugar
    1 1/4 Tbsp. cornstarch

    Recipe

    Grease 9X13 baking dish.
    Fill bottom half full with fresh sliced peaches.
    Sprinkle with lemon juice and about 1/4 cup sugar.

    Cream until smooth:
    1 1/4 cups sugar
    4 1/2 Tbs. margarine
    add:
    1 1/2 c. flour
    1 1/2 tsp. baking powder
    1/2 tsp.salt
    3/4 to 1 cup milk

    Beat until you have a spreadable batter.
    Spread over peaches.

    Combine:
    1 1/4 cups sugar
    1 1/4 Tbsp. cornstarch
    Sprinkle over the batter.
    Pour 1 1/2 cups boiling water over the whole thing.
    Bake at 350 for 1 hour or till brown and bubbly.
    Very good with vanilla ice cream.

    If using canned peaches skip the sugar and lemon juice.
    Then use only 1 cup of sugar with the cornstarch.
