Kiki's BBQ Sauce

List of Ingredients
Sauté:
2 garlic cloves, minced
1 medium onion, chopped
in:
3 Tbs. Oil until caramelized
Whisk in:
1/4 cup brown sugar
1-6 oz can tomato paste
1/2 C total of any combination of peppercini juice, pickle juice or cider vinegar
1/4 C coffee
1/4 C orange juice
1 T Worcestershire sauce
1 T allspice
1 T chili powder
1 t ground cayenne pepper
1 t black pepper
1 t white pepper
1 t cumin
1 t garlic juice
splash or 2 liquid smoke
splash or 2 Tabasco
Add:
14 oz. can whole tomatoes
Recipe
Bring to a boil, reduce heat and simmer until the tomatoes and onions are incorporated into the sauce, and the sauce is a consistency to your liking (about 2 hours). Puree in a blender if necessary
This is my best guesstimate; except for the canned tomato paste and tomatoes I just splash and sprinkle until it looks and smells about right. It should make between three and four cups depending on how thick you like it. This is my “special” rib sauce. I’ll start the ribs in the crockpot (4-6 hours on low) covered with this sauce, reserving enough sauce for the grilling process and more for dipping at the table.
