    This has been modified from the original. It just isn't spring until you have had a slice of this family favorite, served warm with ice cream.

    List of Ingredients




    Crust:
    2 C. flour
    10 T. powdered sugar
    1 C. butter, room temp.

    Rhubarb filling:
    2 eggs, beaten
    3 T. flour
    1/2 tsp. baking powder
    1 1/2 C. sugar
    1/2 tsp. salt
    1 tsp. vanilla
    3 C. finely chopped rhubarb

    Recipe



    Crust:
    Combine flour, powdered sugar in a mixing bowl. Cut in butter with pastry blender until mixture resembles coarse crumbs. Press into greased 9 x 13 x 2 inch pan. Bake at 350 degrees about 20 minutes. Cool. Make rhubarb filling.

    I have made it using warm butter and patting the dough into the pan. Make sure it goes up the side of the pan. Make sure it is golden brown before you removed from the oven.

    Filling:
    Combine remaining ingredients and stir until combined. Pour into cooled crust. Bake 350 dgrees about 45 minutes. Cut into squares, serve warm with ice cream. Makes 12 servings.
