Ginger Cookies

5 C. flour
4 1/2 tsp. baking soda
1 tsp. salt
2 T. ginger
1 tsp. allspice
1 tsp. black pepper
3 sticks unsalted butter
1 C. brown sugar
1 C. sugar
12 T. molasses
2 large eggs
sugar for coating
Recipe
Preheat oven to 350 degrees. Cream butter and sugars, add molasses,eggs, mix well. Add dry ingrdients slowly until jst combined. Flatten dough into a disk, wrap in plastic and freeze 20 minutes. Tear off chunks and roll into 2-inch balls. Roll in extra sugar and place on parchment-lined baking sheets 4 inches apart. Flatten balls into 3-inch rounds, sprinkle with more sugar. Bake until cookies are cracked on top and set, 12-15 minutes. Transfer to wire rack. Makes 24 cookies.
