3/4 C. light molasses
2/3 C. packed brown sugar
1/2 C. shortening
2 tsp. cinnamon
1 tsp. ginger
1 tsp. cardamon
1 tsp. cloves
3/4 tsp. baking soda
1/2 tsp. salt

1 C. whole wheat flour
1 1/4 C. flour
1 tsp. grated lemon peelRecipe
Mix the first 9 ingredients together. Add remaining ingredients.
Divide dough into thirds. Place between parchment paper. Roll to 1/8" place in freezer (flat) 25-30 minutes.
Remove top piece of paper, cut with a round cutter, remove scraps. Leave the rest on the parchment paper. Reroll scraps. Bake 6-8 minues 375 degrees, until edges are lightly brown. Remove from paper when cool. Makes 7 dozen cookies.
