Rainbow Pasta Salad

List of Ingredients
- 1 1/2-2 C. carrots, thinly sliced
- 1 small head of cauliflower
- 2 large stalks of broccoli
- 16 oz. bag rainbow pasta
- 1 medium onion, diced
- 1 C. celery, diced
- 2 red &/or yellow sweet bell pepper, diced
- 1 C. sliced green olives
- 1 C. sliced black olives
- 2 C. apple cider vinegar
- 1 1/3 C. vegetable oil
- 1 1/2 C. sugar
- 2 tsp. granulated garlic
- 3 tsp. onion powder
- 3 T. Italian seasoning
- 1 C. provolone cheese, diced (optional)
- 1 C. pepperoni, diced (optional)
Instructions
- Quickly blanch and chill, broccoli, cauliflower and carrots.
- Using the vegetable water, boil the pasta according to directions of the package, drain and chill.
- Mix vinegar, oil, sugar, garlic and onion powders,Italian seasoning, shake the dressing to mix and dissolve the sugar.
- In a very large bowl, combine pasta, vegetables, cheese and pepperoni, and toss gently with the dressing. Chill overnight.
