Charbroiled Rattlesnake Tofu

- 3 packages extra-firm tofu (16 oz. each)
- Vegetable oil
- 1 recipe (1 C.) Western Spice
- 1 recipe (3 C.) BBQ Sauce
Instructions
- PRESS Tofu, open ox, drain liquid and wrap in paper towels. Place a rack over a shallow pan and lay tofu on the rak. Cover with heavy plates or pan and allow to stand for 30 minutes.
- CUT- remove from paper toels and cut lengthway to make 6 evenly sized "finger cuts."
- DEEP-FRY- after tofu hs been pressed and cut, deep-fry at 350 degrees until lightly golden about 2 1/2 minutes. Drain on paper towels.
- MARINATE- combine 3 C. water and 3/4 C. vegetarian chicken flavored powder in a bowl. Add fried tofu and marinate 90 minutes. Drain on paper towels.
- Insert an 8-9 inch wooden skewer through the middle of each tofu piece.
- On one side of the tofu, cut ridges every 1/4 inch. brush sides with oil and dust with SouthWestern spice.
- Grill over hot coals or broil for several minutes until sear marks appear on each piece.
- Serve with BBQ sauce
