Mincemeat Pockets
1/2 C. butter
1/2 C. vegetable shortening
1 C. sugar
1/2 C. brown sugar (packed)
2 eggs
1 tsp. vanilla
3 1/4 C. flour
1 tsp. soda
1/4 tsp. salt
1 C. prepared mincemeat
Recipe
Cream butter and shortening. Add sugars gradually. Beat in eggs, add vanilla. Blend in dry ingredients. Chill.
Roll dough 1/8 " thick on floured surface. Cut 2" circles. Place 1/4 tsp. in each round. Fold over to make a half-circle. Press the curved edge with the tines of a fork to seal. Place on lightly greased cookie sheets or parchment paper. Bake at 350 degrees about 12 minutes. Make about 9 dozen.
