Recipe Introduction
Cheris says her Mom makes the best zucchini bread in Middleton.
List of Ingredients
- 2 Cups flour
- 2 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. salt
- 1 tsp. ground cinnamon
- 1 tsp. grated nutmeg
- 3 eggs
- 1-1/2 Cups sugar
- 1-1/4 Cups corn oil
- 1 tsp. vanilla extract
- 2 Cups zucchini, shredded (1/2 lb)
Instructions
- Preheat oven to 350. Grease (2) 5-1/2x4-1/2-inch loaf pans or a 9x5-inch loaf pan.
- Sift the flour, baking soda, baking powder, and salt in a mixing bowl.
- Add cinnamon and nutmeg, stir to blend.
- With an electric mixer, beat the eggs and sugar together until thick and pale.
- With a wooden spoon, stir in the oil, vanilla, and zucchini.
- Fold in the flour mixture and stir until combined. Do not over mix.
- Pour the batter into the prepared pan(s).
- Bake in the middle of the oven until a cake tester comes out clean. (about 1 hour for 2 sm. pans or 1-1/4 hours for lg. pan)
- Let cool in the pans on a wire rack for 15 minutes.
- Unmold onto the wire rack to cool completely.

A good many childhood ailments are cured miraculously as soon as it's too late to go to school.
