    Southern Chicken Casserole


    List of Ingredients


    • 2-3lb frying chicken, cut up
    • 1/2 lb bacon
    • 4 med potatoes, quartered
    • 1 lg onion, thinly sliced
    • 1 tsp poultry seasoning
    • 1 tsp salt
    • 1/2 tsp pepper


    Instructions


    1. Wash and dry chicken.
    2. In Dutch oven fry bacon until crisp and remove.
    3. Add chicken to pan and brown well on all sides. Remove to a 2 qt casserole.
    4. Add bacon to chicken.
    5. Brown quartered potatoes in bacon fat. Remove from fat and place on top of chicken.
    6. Put onion slices on top of potatoes and sprinkle with all the seasoning.
    7. Cover and bake at 350 for 40 minutes or until chicken is cooked through.
