    Zucchini Corn Bread

    Pre-heated oven 400 degrees
    Bake 30 to 35 minutes until browned.


    List of Ingredients


    • 3 cups grated zucchini
    • 2-1/2 cups self-rising cornmeal
    • 1-1/2 cups cottage cheese
    • 4 eggs--beaten
    • 1/2 cup sugar
    • 1-1/2 sticks butter or margarine --melted


    Instructions


    1. Mix all ingredients and pour into a 13x9x2" pan.
    2. This can be wrapped in serving size pieces and put in the freezer. Thaw and warm in micro-wave oven.
