    Pineapple-Orange Sunshine Cake

    Recipe from Prevention magazine.
    Pre-heat oven to 350 degrees
    Serves; 16


    List of Ingredients


    • CAKE
    • 1 box Sweet Rewards yellow cake mix
    • 1/4 cup applesauce
    • 4 eggs
    • 1 can (11oz.) mandarin oranges in light syrup
    • FROSTING
    • 1 container (8oz.) light- whipped topping; thawed
    • 1 package (3.4oz,) instant vanilla pudding mix
    • 1 can (15-1/2oz.) crushed pineapple in juice


    Instructions


    1. CAKE; Preheat oven to 350*F.
    2. In a large bowl, stir together all cake ingredients until moist, beat by hand for 2 minutes.
    3. Coat a 13x9" cake pan with cooking spray. Pour batter into pan. Bake for 30 to 40 minutes, or until toothpick inserted in the center comes out clean. Cool completely.
    4. FROSTING;
    5. In a large bowl, mix together all the frosting ingredients until well blended. Spread over cake.
    6. Store in refrigerator. Serves 16
    7. Per servings; 212 cal. 4 g fat


    Final Comments


    To make a multilayer cake, bake the batter in two 9" pans for about 25 minutes, or until they test done. Split the cooled layers in half horizontally, spread with frosting, and stack.
