    Sugar-Free Peanut Butter Cups

    My Husband is Diabetic and today I decided to try for a sugar-free peanut butter cup, and to my surprise it turned out really good.He also really liked it! Note: the peanut butter will have some sugar if not sugar-free.

    List of Ingredients

    1 cup creamy peanut butter
    1 (8oz.) cream cheese, I used fat-free
    1/2 tsp. vanilla extract
    1 cup Splenda sugar substitute(the pouring kind)other brands probably could be used.
    4 oz. white sugar-free chocolate chips (melted)

    12 oz. Sugar-Free Chocolate for Coating. I used the White Chocolate
    (this can be found where candy making supplies are sold)

    Recipe

    Mix peanut butter, cream cheese and sugar substitute, 4 0z. melted sugar-free chocolate chips, and vanilla. Mix well.

    In a small sauce pan, boil some water. Put Brown or White chocolate sugar-free chips in a slightly larger bowl than the pan and place over the Hot water, keep on low heat until choclate melts. and while working with the candy.

    Use peanut butter cup papers or molds for the cups. Cover bottoms and sides of cups with melted chocolate and put in freezer for a few minutes until set.

    Remove and fill with peanut butter mixture and then cover tops with melted chocolate.Return to freezer until top is set about 3 minutes.

    note: Cup cake papers can be used. Just cut them down to the size of peanut buters cup papers.
