List of Ingredients
3/4 pound Italian sausage, hor or sweet (can use fully cooked smoked sausage)
8 oz. elbow macaroni
3 Tbsp. butter or margarine
1/4 cup chopped onion
3 Tbsp. Flour
1/4 tsp. pepper
1/2 tsp. salt
1 cup milk
1/2 cup chicken broth
2 Tbsp. parsley flakes (optional)
1 cup grated Parmesan cheese
1 cup (4oz.) shredded Mozzarella cheese
Instructions
Remove sausage from casing. Cook in skillet over med. heat until sausage loses it red color. Stir often.After 10 minutes or when done, pour off grease. Set aside. If using smoked sausage just cook for a few minutes.
In a pot of boiling water, cook macaroni according to package directions. Drain
In a saucepan, melt butter, Saute onion until softened. Stir in flour and cook for 1 minute.
Add salt, pepper, milk and broth slowly, stirring until blended. Cook and stir for 1 minute until sauce is slightly thickened. Add parsley and cheeses.
Combine the cooked macaroni, sausage and the cheese sauce. Spoon mixture into a 1-1/2 quart oblong baking dish.
Bake at 350 degrees for 20-25 minutes or until hot and bubbly. Sprinkle with additional cheese after 15 minutes, if desired.
