List of Ingredients 4 cups Yellow Squash ( cubed) 1 cup chopped onion 1 stack Ritz Crackers (or any brand butter crackers) Crushed. 1 cup grated Cheddar or Colby Cheese 2 eggs 1 teaspoon salt Pepper 1/4 stick Margarine or Butter -Melted 1/2 cup Skim milk or low-fat Instructions Cook squash and onion in small amount of water until tender: Drain well. In another bowl put crushed crackers and cheese; set aside. Beat eggs and milk together, add to squash mixture. Add melted butter and 1/2 of the cheese and cracker mixture. Pour into an oval casserole dish or an 9x13 dish. Sprinkle the remaining cracker and cheese mixture over the top. Put a few pats of butter on top. Bake in a 400 degree oven for 25 minutes, uncovered.
