List of Ingredients 1 cup long-grain rice 1 cup finely chopped onion 1 clove garlic , mincec or pressed (or 1/2 tsp. garlic powder) 2 Tbsp. vegetable oil 1 cup chicken broth 1 can (8oz.) tomato sauce 1/2 cup green onions sliced 1/2 cup green peppers, diced 1 tsp. salt 1/4 tsp. pepper Grated cheese Instructions In heavy saucepan, cook rice, onion, and garlic in hot oil over mediun-high heat for 4 minutes. Add chicken broth, tomato sauce, green onion, green pepper, salt and pepper. Bring to a boil. Cover and simmer 20-25 minutes or until rice is tender. Let sit 5 minutes. covered, before serving. Garnish with green pepper rings ans serve with grated cheese, if desired.
