    List of Ingredients


    • 1 cup long-grain rice
    • 1 cup finely chopped onion
    • 1 clove garlic , mincec or pressed (or 1/2 tsp. garlic powder)
    • 2 Tbsp. vegetable oil
    • 1 cup chicken broth
    • 1 can (8oz.) tomato sauce
    • 1/2 cup green onions sliced
    • 1/2 cup green peppers, diced
    • 1 tsp. salt
    • 1/4 tsp. pepper
    • Grated cheese


    Instructions


    1. In heavy saucepan, cook rice, onion, and garlic in hot oil over mediun-high heat for 4 minutes.
    2. Add chicken broth, tomato sauce, green onion, green pepper, salt and pepper.
    3. Bring to a boil. Cover and simmer 20-25 minutes or until rice is tender.
    4. Let sit 5 minutes. covered, before serving.
    5. Garnish with green pepper rings ans serve with grated cheese, if desired.
