    Marinated Carrots

    List of Ingredients


    • 3 1bs. carrots
    • 1 can tomato soup (no water)
    • 1 cup sugar
    • 1/2 cup oil
    • 1/3 cup vinegar
    • 1 sliced onion
    • 1 sliced green pepper


    Instructions


    1. Peel and slice carrots.(about 1/2" slices). Cook until slightly tender, drain well.

    2. Mix next 4 ingredients, put in a pan and bring to a boil.

    3. Slice the pepper and onion thinly, add to dressing and pour over carrots.



    Final Comments


    I have cut the oil down to 1/4 cup and seems to work fine.
