Spinach-Cheese Quesadillas - 16

1 (10-oz.) package frozen spinach, thawed, drained well
1/4 cup chopped, mild green chili peppers
1/4 cup finely-chopped green onion
Vegetable oil spray 4 (10-ounce) flour tortillas
2 cups (8 ounces) Healthy Choice Garlic Lovers Sun-Dried Tomato Cheese Shreds
1 cup Salsa
Cilantro sprigs, for garnish
Preheat oven to 450°F. Combine spinach, chili peppers and green onion. Spray a baking sheet(s) with vegetable oil spray. Place 2 tortillas on prepared baking sheet; sprinkle 1/2 cup cheese on each tortilla. Spread spinach mixture evenly over cheese. Sprinkle both tortillas with remaining cheese. Top with remaining 2 tortillas. Gently press tortillas with spatula.
Bake at 450°F for 6 to 7 minutes, or until tortillas are crisp and cheese is melted. Halfway through baking, press tortillas again with spatula. Cool slightly; cut each tortilla stack into 8 wedges. Serve immediately with salsa.
Variations: Consider using a flavored tortilla if available. Other flavors of Healthy Choice Shredded Cheese can be substituted for flavor variety.
